This is a really quick and easy dish that you can whip together from ingredients that you may already have in your kitchen.  It is a welcome change from that bottled red sauce that I usually slap onto pasta when I am in a hurry.   You will need a fresh salad to go with this very rich dish to make a really nice Italian meal. See how few ingredients you will need to make this delicious dish…. Ingredients: 6 ounces bacon strips, cooked until nearly crisp, cooled and crumbled 3 eggs 3-4 tablespoons butter ½ cup Parmesan cheese, grated 1 pound of your favorite pasta, dried or fresh (I use penne or spaghetti) salt and pepper to taste ¼ teaspoon of nutmeg or more, to taste Optional: Substitute some chunks of low fat ham for the bacon Mix in some chopped parsley just before serving, then sprinkle a little more on top In a medium sized mixing bowl, just beat the eggs until they are scrambled and mix in all the Parmesan cheese. Cook your pasta according to package directions and drain well.  Melt the butter in a large skillet or medium sized pot, then add the bacon and the cooked pasta and toss to combine.  Make sure that the heat under the skillet is on medium low, then add the egg mixture and combine.  Season with the salt, pepper and nutmeg and serve warm.  See how fast that was!
