Vietnamese Marinade for Skewers

This is a very tasty marinade for barbecuing chicken on skewers Vietnamese style.  I visited a Vietnamese restaurant years ago and they had a free flyer by the door with this recipe on it.  I have made this marinade regularly ever since.  Please give it a try as the only special ingredient in it is the Asian fish sauce which today is not hard to get. Ingredients: 1 pound boneless skinless chicken breasts, cubed ½ teaspoon lemon juice ½ teaspoon ground lemon peel 1 clove fresh garlic, peeled and chopped ½ teaspoon ground unsalted peanuts ½ teaspoon ground sesame seeds ½ teaspoon soy sauce ½ teaspoon fish sauce 1 teaspoon sugar ¼ teaspoon paprika 1 teaspoon honey The quantities of marinade here seem tiny but believe me they will flavor the chicken wonderfully.  Just combine all the ingredients and marinade at least for 30 minutes before grilling the chicken on skewers.  Serve with my Vietnamese Dipping Sauce and enjoy!
