It is getting easier to find vegetarian recipes since the world has become more tolerant and more interested in vegetarian practices in general.  A vegetarian is a meatless diet is based on vegetables, fruits, grains, nuts, and seeds, with or without eggs and other dairy products.
There are many reasons why people are choosing vegetarian diets.  First, a vegetarian diet can be better for your health.  It can help lower cholesterol, blood pressure and body mass plus reduce chances of  contracting type 2 diabetes and certain cancers.  People may also choose vegetarianism for ethical reasons, and consider that it is cruel to use animals for food.  There are also some religions which do not allow eating meat. There are also economic reasons for choosing a vegetarian diet – it can cost less than a meat based diet.  Meat is much more expensive in many parts of the world than beans or rice, for example.  Vegetables, fruits, grains and nuts can easily be purchased raw without the extra costs that are associated with pre-cooking or processing.  However, in countries like the United States where meat is not as expensive people have chosen to be vegetarians for the health, ethical, religious, political, environmental, cultural, aesthetic or economic reasons. Are vegetarian recipes necessarily bland?  Not on this website!  The taste of animal fat that most meat eating people are used to may be absent, but there are many other subtleties of flavor of various oils, vegetables, herbs, and spices that make the taste of vegetarian recipes so clean and fresh. I suppose my favorite recipes are found in my Indian recipe webpage.  Of these, the one my family enjoys the most is my chickpea curry (Chana Masala) and dal recipes.  These are easy to make and contain only a few ingredients that are not exotic and may be found in most food stores.  Don’t miss my mattar paneer recipe – everyone should try to make the home made farmer’s cheese in this recipe at least once.  My carrot halwa (Gajar Ka Halwa) is my best vegetarian sweet dessert, just don’t tell my children that they are eating carrots for dessert! My mother would be surprised to know that her potato salad recipe was considered to be one of my best vegetarian recipes.  It is a time honored classic that has been in my family for many years.  From my mother in law comes her New England corn chowder recipe, which is the heartiest and most filling of all my vegetarian dishes.
