Finally, a sweet & savory salad with an Indian twist that you can make with fresh peaches available all year round! Take the time to make the homemade tamarind sauce below – there is no substitute. This is a very colorful chaat so make sure you display it well when serving. Ingredients: For the dressing: 2 teaspoons juice of one lime (bottled is okay) 1 teaspoon honey (may substitute granulated sugar) 1 teaspoon chaat masala, if available. (From an Indian grocery or online) 1 inch fresh ginger, peeled and chopped or grated fine ½ - ¾ of one red onion sliced paper thin or diced 1 Thai bird pepper, chopped fine, or some red pepper flakes (both optional) For the salad: 4 ripe fresh peaches, pitted and sliced 3-5 ripe tomatoes, chopped, reserved with their juices For the garnish: ½ cup fresh cilantro, chopped ½ cup peanuts, chopped ½ cup sev, any sev snack mix (see photo) 2 tablespoons homemade tamarind sauce (see recipe below) Homemade tamarind sauce: 2 cups water 1 tablespoons tamarind concentrate (from an Indian grocery or online) 1 cup jaggery (ditto, may substitute brown sugar) Dash of red pepper flakes – optional Dash of fresh grated or powdered ginger - optional Just simmer all these ingredients until dissolved. Whisk together the lime juice and honey and all the other dressing ingredients. Toss the salad ingredients together and let their flavors combine for 10+ minutes. Sprinkle with the four garnish ingredients and serve.
