Quiche – but what about the crust?  This is the big hurdle to jump when considering making a quiche.  You could make a crust from scratch – lots of work!  You could buy a frozen pie shell – expensive!  The answer is a recipe where you just mix everything together and it makes its own crust.  Try my Mom’s recipe and see…. Ingredients: 3 cups chopped broccoli ½ cup onion chopped fine 2 teaspoons parsley – optional 1 teaspoon salt ½ teaspoon garlic powder 1 teaspoon oregano ½ cup grated Parmesan cheese 1 cup grated sharp cheddar cheese ¼ cup canola or other cooking oil 4 eggs, beaten 1 cup Bisquick Mix all these ingredients together and just pour them all into a greased 10 inch pie plate.  Bake at 350 degrees for 40-45 minutes, or until a knife stuck into the middle comes out fairly dry.  Somehow the Bisquick forms a crust on its own – impossible! Alternate versions:  In place of the broccoli try 3 cups grated zucchini, chopped spinach or cut asparagus.  And try the frozen pie shell to see if you think it is worth it.
